I want get the subs number of an channel with the helix API but I don’t find how do this.

You can’t, at least not right now. Helix is unfinished, and as per the docs there isn’t a subscribers endpoint yet.
Until Helix is updated with that endpoint, you’ll have to use v5 for now.
