Hi, I saw several question posts about how to get followers and they all rely on “Get Channel Followers” but this endpoint isn’t available for new users anymore. Is there an alternative to get only the follower count?

Get Channel Followers is the new endpoint, https://dev.twitch.tv/docs/api/reference/#get-channel-followers , that’s not deprecated.
