In the Extension Console, there’s an Asset Hosting tab. There I can select the Type of Extension (Panel, Video - Fullscreen, etc.) among other things. Is it possible to change these values via an API call? If so, what is the route?

No, no API routes to modify any aspects of an Extension that is set via the Console.
